Cooking Steps

    Cook the rice as per the packet instructions, set aside

    To a hot frying pan add the zingy chilli boost, garlic, ginger and half the scallions

  • 3

    Fry for a minute or so then add the rice, breaking it up with the back of your spoon, then stir through the carrot.

    Cook for a min until all heated through, then place into two warmed bowls and cover.

    Quickly wipe out the pan, add some more oil, crack in the eggs, fry to your liking and season.

    Squeeze the lime juice over the rice and eggs, scatter with the cilantro leaves, remaining spring onions and a drizzle of zingy boost and lime wedges.
